Shrimp and Cauliflower Grits Recipe

The first time I ever tried Shrimp and Cauliflower Grits was at Snap Kitchen. It's probably one of my favorite menu items right now and I never leave the store without it. But as the seasons change so does the menu at Snap Kitchen and my Shrimp and Cauliflower grits may no longer be. Which is a great thing if your looking for pre made meals that are never boring.

With this in mind, I began my search to make my own Shrimp and Cauliflower Grits whenever the craving struck. So to google I went and found the perfect recipe from Jessica Gavins. Although I didn't use her shrimp recipe, the Cauliflower grits were simple and perfect. I basically seasoned the shrimp with a little cajun seasoning, sautéed them, and placed them on top of the savory grits. I've listed all the ingredients and recipe below.   • 1 head cauliflower, (about 1 pound, yield 4 cups grated)
  • 1 cup unsweeted cashew milk or coconut milk
  • 1 tablespoon ghee
  • 1/4 cup vegetable stock
  • 1/4 teaspoon kosher salt
  • 1/4 cup grated sharp cheddar cheese

Set a pan on medium heat and add the cauliflower. Let it sit for 5 minutes to soften. After 5 minutes is up, add the ghee, 1/4 of the milk, vegetable stock, and salt to the cauliflower. Let it cook through for another 5 minutes. Once some of the moisture is absorbed. Add the mixture to a blender and pulse until its grainy. Transfer back to the pan and add cheese, stir until melted. Slowly add the rest of the milk until grits are smooth and creamy.

For the shrimp I just seasoned with cajun seasoning and sautéed it until they were cooked and added them together ready to serve.
